C’mon Summer, Get Here Already!

Happy Tuesday!

The weather in Boston is back to gloomy. I’d much rather have nice weekends, but a sunny Monday morning would be helpful. It was really hard to get up yesterday and I missed my workout. I didn’t mean to miss my workout, but I guess instead of hitting snooze I actually hit off. At least I woke up!

The great weather we’ve been having (on the weekends) is getting me very, very excited for the summer. I wish it would get here already! Here are some things I’m looking forward to:

Flip flops and Pedicures. Ok, I get pedicures all through the year, but they’re not as much fun when I don’t get to show off my pretty toes. Right? All you girls out there know you want to show off that $40 pedi! And what better way than in cute flip flops?

These are my favorite flip flops and my brand new pair of white sandals. I can’t wait to wear them. I need some new flip flops though; a couple sparkly pairs or something a little more fancy.

Concerts. Summer is always the best time for concerts. I have tickets to a few of my favorite bands from June through September. The best show will be my favorite band, The Slackers, on a boat cruise around the Boston Harbor. Heaven!

The Beach. Oh the beach, how I love you. I like nice warm beaches in Florida more than the cold water ones up here, but the beach is the beach. The sound of waves, the sand in my toes, people watching…people watching is one of the best parts 😉 You never know who/what you’ll see at the beach.

My favorite beach to visit in MA is Plum Island. It’s not the fanciest beach and there aren’t a lot of restaurants or shops around, but the lack of entertainment keeps the beach from getting too crowded- hence why I like it. The parking is much cheaper than most beaches in MA and I can almost always get a good spot on the sand.

Blood. Haha- did that surprise you? I might be taking a phlebotomy course with my friend Kara. I’d be a certified Phlebotomist, which has absolutely nothing to do with my current professions. LOL. I also might get really sick trying to stick a needle in to someone’s arm…aahhhhh! I’ll have to see the schedule for this class and how much it costs.

Anyway…

On Sunday night, I made Pineapple Taco Chicken in my slow cooker. Well, I finally got to try it last night and it was delicious! The taco seasoning did overpower the pineapple salsa a bit, but I added more on top before eating it and that worked to add more pineapple flavor.

The spinach added some nice crunch and some extra nutrients! The tortillas were these great Low Carb Tortillas from Trader Joes. They only have 40 calories each and had a good amount of fiber and protein. This was a really light and healthy meal!

Oh, and I just thought of something else I’m looking forward to this summer:

Finding a friend for this cutie. I think she needs a buddy to play with while I’m at work all day. 🙂
